Peachy Greens Salad Just in time for summer

Give yourself of solid dose of potent vitamins, minerals, complete protein, and omega fatty acids with this gorgeous summertime Peachy Greens salad by Amy Lyons of Fragrant Vanilla Cake.

Main Ingredient: Lemon, Carrots, Kale, Hemp Seeds, Chia, Strawberry, Beet
Difficulty: Easy
Equipment Needed: Food Processor



1 1/2 cups diced ripe peaches
3 Tbsp lemon juice
a pinch sea salt
1 Tbsp chia seeds
1 Tbsp raw shelled hempseeds

1 large bunch greens or kale, torn into bite sized pieces
1 carrot, julienned
1 beet, julienned
1 peach, sliced
1 cup strawberries, sliced

1 Tbsp raw shelled hemp seeds for serving


1) In a food processor, combine the 1 1/2 cups peaches, lemon juice, sea salt, and puree until smooth.

2) Stir in the chia seeds and hemp seeds and set aside.

3) In a large bowl combine all other ingredients, then pour the dressing over and toss to coat.

4) Sprinkle with additional hempseeds and serve!
